Our firme line up

About Us

Our distillery is located in Santiago Matatlan, Oaxaca, Mexico. The palenque is third generation owned and operated by talented maestro mezcalero. The palenque's maestro mezcalero united with Firme Mezcal on a common idea of producing quality artisanal Mezcal. Firme Mezcal strive to keep the unique and proper traditions of making mezcal passed down from generations to generations. 


The maestro mezcalero is involved in every step of the distillery process from hand picking the right mature agaves to setting the conical stove oven a blaze with traditional oak wood and volcanic rocks, to the grinding of the cooked agave on a horse pulled stone grinder (Tajona). The mezcal makers have pride and respect for their product that is regulated by a government entity and keeps production with ecological and sustainability goals in mind.

Species: Maguey espadín (Agave angustifolia)

Taste notes: Crystalline with a sweet aroma and a slight fruity touch, smooth to the taste. Notes of caramel, vanilla and pineapple with a smooth and round finish.

Agave age: Espading Agave, 9 years - Tobala Agave, 12-15 years

Category: Artisan Mezcal

Class: Ensemble Espadin Agave and Tobala Agave

Species: Maguey espadín (Agave angustifolia) and Maguey Tobala  (Agave Potatorum)

Tasting notes: Silver crystalline, woody aroma with notes of vanilla and sweet nuances. When tasted it offers citrus flavors with a smooth finish.

Tasting notes: Bold with a vanilla buttery & woody aroma, pear fruity earthy notes typical of Jabali agave, with great body and persistence on the palate and aromas. 
 

Espadin Destilado con Cempasuchil y Mandarina

Tasting notes: Crystalline with aromatic intensity with nuances reminiscent of flor de cempasuchil with citrus touches of mandarin and pineapple. Citrus notes and long lasting palate personality.
