Our firme line up

 

Our distillery is located in Santiago Matatlan, Oaxaca, Mexico. This palenque is generationally owned and operated by the third generation of Mezcaleros. The palenque is run by a group of young Mezcal makers united by a common idea of producing quality artisanal Mezcal. They strive to keep the unique and proper traditions of making mezcal passed down from generations. They work with multiple types of agaves and diverse forms of distillery. 


The mezcaleros are involved in every step of the distillery process from hand picking the right mature agaves to setting the conical stove oven a blaze with traditional oak wood and volcanic rocks, to the grinding of the cooked agave on a horse pulled stone grinder. The mezcal makers have pride and respect for their product that is regulated by a government entity and keeps production with ecological and sustainability goals in mind.

Joven Espadín

 

Agave age: 9 years

Category: Artisan Mezcal

Furnace Type: Stone Conical

Grinding: Horse-drawn stone mill

Fermented: Wooden tubs

Distillate: Copper alembic - Double destillation.

Class: Young 100% Agave

Alcoholic degree: 46% Alc. Vol

Presentation: 750ml, 250 ml, and 50 ml

Species: Maguey espadín (Agave angustifolia)

Taste notes: Crystalline with a sweet aroma and a slight fruity touch, smooth to the taste. Notes of caramel, vanilla and pineapple with a smooth and round finish.

Ensamble Mezcal 

 

Agave age: Espading Agave, 9 years - Tobala Agave, 12-15 years

Category: Artisan Mezcal

Furnace Type: Stone Conical

 Grinding: Horse-drawn stone mill

Fermented: Wooden tubs

Distillate: Copper alembic - Double destillation.

Class: Ensemble Espadin Agave and Tobala Agave

Alcoholic degree: 46% Alc. Vol.

Presentation: 750 ml,  250 ml, and 50 ml 

Species: Maguey espadín (Agave angustifolia) and Maguey Tobala  (Agave Potatorum)

Tasting notes: Silver crystalline, woody aroma with notes of vanilla and sweet nuances. When tasted it offers citrus flavors with a smooth finish. 
 

Firme Jabali Mezcal

 

Agave age: 18 years

Grinding: Horse-drawn stone mill

Fermented: Open air wood vats

Distillate: Copper alembic - Triple destillation.

Class: Young 100% Agave.

Alcoholic degree: 45% Alc. Vol.

Presentation: 750 ml and 250 ml

Species: Maguey Jabali

Tasting notes: Bold with a vanilla buttery & woody aroma, pear fruity earthy notes typical of Jabali agave, with great body and persistence on the palate and aromas. 
 

Espadin Destilado con Cempasuchil y Mandarina

Tasting notes: Crystalline with aromatic intensity with nuances reminiscent of marigold flower and citrus touches of mandarin. Sweet notes and soft personality.

Tasting Notes: A wild ride of aromas, notes and complexity. Smooth, fiery chili notes, light smoke & strong on the palate, taste with sweetness, florals, fruits and earthy notes until the last note.

Tasting Notes: Homogenous long body, lightly smoked with fresh floral, Cocoa, Butter with a subtle after taste of nuts, peanuts, walnuts, cinnamon & corn.
