Cooking
Cooking in a Conical Underground Oven
In Santiago Matatlán, the heart of Oaxaca, agave is slowly cooked in underground conical ovens. This ancestral technique allows the agave to develop unique smoky flavors, forming the authentic character of Firme Mezcal.
Extraction
Grinding with a Tahona
