Fermented in wooden vats and milled with a tahona, its flavor profile is a statement: herbal and earthy notes are intertwined with a persistent smokiness and a spicy finish. Coming from a fusion of Espadín, Tobalá, Barril, Cuishe, Mexicano, and Coyote agaves, our Ensamble 6 is a testament to the richness of the land. Cooking

Cooking in a Conical Underground Oven

In Santiago Matatlán, the heart of Oaxaca, agave is slowly cooked in underground conical ovens. This ancestral technique allows the agave to develop unique smoky flavors, forming the authentic character of Firme Mezcal.

Extraction

Grinding with a Tahona

After cooking, the agave is crushed using the traditional horse-drawn tahona. This manual method carefully extracts the juice, preserving the richness of its natural sugars for fermentation.

Fermented

Fermentation in Outdoor Pine Tanks

The must ferments in outdoor pine wood tanks, where temperature and the surrounding environment influence the development of complex flavors.

Distillation

Double Distillation in Copper Alembics
